We should say “All these” because the preposition “of” would mean that only some of these were being referred to.

Examples:
  1. We should say “Two of these flowers are wilting,” not “Two these flowers are wilting.”
  2. We should say “All these flowers are beautiful” or “All are,” not “All of these flowers are beautiful.”
Exception:

When referring to an unknown quantity of items only by using a pronoun it is necessary to use the preposition “of,” as in: (question) “How many of the flowers are beautiful?” (answer) “All of them.” We can’t say “All them.”
