To enable Back Tap gestures, go to Settings –> Accessibility –> Touch, and tap "Back Tap" at the bottom. Next, choose either "Double Tap" or "Triple Tap" to view the available actions.
Ensure you install the latest iOS software on your iPhone for the best results. Back Tap has been around since iOS 14, but it'll work best on updated iOS 16 software, and you'll get more actions to choose from. For example, the latest software lets you trigger Camera, Flashlight, Lock Rotation, and Color Filters, options missing from the latest iOS 14 version.
