Ground Lamb Salad
This refreshing way to enjoy lamb is a perfect salad dish. Serve hot while the flavors of the herbs are at their best.

  • 3/4 lb ground lamb
  • 1 cup frozen peas

  • 1 TBS fresh lemon juice
  • 1 head butter lettuce
  • salt and pepper to taste
Directions:

  2. Add peas, salt and pepper and cook for another 2-3 minutes, and add tomatoes, chopped fresh mint, basil, cilantro, lemon juice.
  3. Rinse and dry lettuce leaves discarding wilted outer leaves. Place on platter and fill with spoonful of lamb mixture. Roll by hand and eat.
