On a simple note, "yes", all your transactions sa internet is kept private. Example po into if your using public WiFi, while connected dyan, maiiwasan po naten na mah-a-c-k o makuhan ng mga sensitive data naten, such as passwords, pins, etc.
But someone has to keep our data, yan po yung mga servers mismo ng ssh/vpn. So be wise po sa pagpili ng ssh/vpn provider para po safe any inyong data. Pick a provider with a good reputation that don't mess with clients' data, and if they provide a proxy, better use them than randomly pick from unsecure ones. (If kaya naman gumawa ng SSL based ehi, it's better)

But how can we assure that they share vpn or ehi is safe to use.?

Every connection po sa http injector at may log, you can check there kung anong provider nila by checking the servers note.
At kung kaya nyo gumawa ng sarili nyong file, mas ok kasi kayo mismo makakapili servers ninyo.
Boss nga pla marunong ka po gunawa ng ehi file sa smart po no load..?
