Instead of treating traditional dishes as something that must remain unchanged, they are experimenting with presentation, ingredients, and business models.

This creates a bridge between heritage food and modern dining.

The approach also gives local agriculture a role in the development of regional cuisine. Filipino food can therefore evolve while still retaining a recognizable connection to place.
