
The thin skin of fresh ginger can be awkward to remove around its irregular curves using a vegetable peeler.
For relatively fresh ginger, the edge of an ordinary spoon can scrape away the thin skin while following knobs and uneven areas.
This can remove less of the edible flesh than aggressively cutting the skin away with a knife.
Sometimes the better kitchen tool isn't the sharpest one in the drawer.
