Black garlic may look unusual, but it is actually ordinary garlic that has been aged under carefully controlled heat and humidity. During this process, the cloves turn black and develop a sweet, rich flavor. The aging also changes its texture, making it soft and almost jelly-like. Unlike fresh garlic, black garlic has very little of the sharp smell people usually expect.

Chefs around the world use it to add deep flavor to many dishes. A simple aging process completely transforms an everyday ingredient into a gourmet food.
