PINAKBET RECIPE

Ingredients:
1/4 kg pork belly, sliced into bite-sized pieces
2 tablespoons cooking oil
4 cloves garlic, minced
1 onion, sliced
2 tomatoes, sliced
2 cups sliced eggplant
1 cup sliced okra
1 cup sliced bitter melon (ampalaya)
1 cup sliced squash
1 cup string beans, cut into 2-inch lengths
1 cup water
2 tablespoons bagoong (fermented shrimp paste)
Salt and pepper to taste

Instructions:
*Heat oil in a pan over medium heat. Fry the pork until crispy and golden brown. Remove from the pan and set aside.
*In the same pan, sauté garlic, onion, and tomatoes until softened.
*Add the sliced eggplant, okra, bitter melon, squash, and string beans. Stir-fry for a few minutes until vegetables are slightly tender.
*Pour in the water and bagoong. Stir well to combine.
*Cover and simmer for about 5-7 minutes or until the vegetables are cooked but still crisp.
*Season with salt and pepper to taste.
Add the fried pork on top of the vegetables.
*Cover the pan and let it simmer for another 2-3 minutes to allow the flavors to meld together.

Serve hot with steamed rice.
