First up, Windows 10 Lite isn't a separate version, it's just a script you run during a installation of regular Windows 10.
I'd stay far from it and similar things though:
It doesn't have a complete list of what it changes, which is a huge red flag.
The few important changes it actually lists later on are to show you what breaks when you install it. And ripping out Edge is a fundamentally stupid idea.
These scripts also have many unintended consequences as they either remove things you actually want to use irreversibly or remove things that Windows expects to always be there, leading to crashes or full on broken systems later on.
There's also this note at the end:
Script is no longer in active development because Windows 10 is being updated too frequently.
So it doesn't matter anyway. It's old and doesn't work anymore.
